Totally in the swing of work, tonight is 2/2 and then three days off for a busy weekend! It was 100 degrees today so sleeping wasn't a bad plan at all. Too hot!
Yesterday when I had no desire to workout I knew kickboxing was in order. With all of the heat it was so hard but just what I needed. I'm starting to get the hang of the punches and kicks (aka they make a lot more noise when I strike the bag) which makes it more fun and effective.
More mango-banana-strawberry-pineapple smoothie bowls with sunflower butter, granola, and coconut....
With all the hot weather I have been craving some cold GAZPACHO. Yum. I use Ina Garten's recipe with just a few modifications.
Gazpacho
2 English cucumbers (seeded)
4 tomatoes
4 red peppers
1 onion
2-3 garlic cloves
46 oz tomato juice
1/3 cup EVOO
2/3 cup apple cider vinegar
salt and pepper
Cut veggies into large chunks and use a food processor to chop veggies. Process each veggie separately. The veggies should be chunky but not pureed. Combine with tomato juice, EVOO, and vinegar. Add salt and pepper to taste. Tastes best if allowed to sit overnight.
I'd have to argue that this is the tastiest low-calorie meal. It's so colorful and flavorful- perfect in the heat. For work, I;m having Food Should Taste Good Jalapeno chips, 1 oz of Havarti cheese, sugar snap peas. Yogurt, mango, and pineapple are packed up for breakfast. A bathing suit-ready lunch box I'd say.
... oh yeah and halfway through my sleep I had a slice of pizza. I wandered out of my room and the boxes from my brothers' lunch was just SITTING there- OPEN. I couldn't help myself- so a light dinner was totally in order.
So I've been reading and wishing I could actually cook some of these healthy dishes hah, they look amazing! But since I live in a camp up here we are limited to a dinning hall unfortunately. but once I'm back in society I will definitely be making some of these. I've recently started my war of nutrition as well hah, so thanks for the inspiration!! Hope all is well! maybe I'll actually see you one of these days when I'm home hah
